parsley potatoes

5 medium potatoes (red skin is best)

3 1/2 tbsp. parsley, finely chopped

1 large pimento pepper or 2 small pimento peppers, finely chopped

4 tbsp. butter

4 cloves of garlic, grated

Water to boil the potatoes

Wash, boil and cube potatoes. Cut into 1-2 inch cubes.
Note: For this recipe I mentioned the red skin potatoes as an alternative. If you happen use these you can leave the skin on when you cube them.
Heat pot over a medium flame and melt the butter.
Add pimento peppers, garlic and parsley; saute until tender.

Add potatoes in 2 parts and toss until well adding salt gradually.
Note: That means add first part, toss, adjust salt. Then add second part, toss, then adjust salt again. Savvy!!
Combine then add more salt to taste as desired.
See how easy it was? Ah goin’ and fix up some more recipes so stay tuned.

Yes, the lemon juice will overpower the delicate flavours of this dish. But I’m all for experimentation lol!!

Let’s see…Why don’t you try adding it first to the melted butter and then continue with the seasonings? It may work there but not too much maybe 2 tsp. Write me and tell me how it comes out :-)
