This tandoori fried fish comes with a wonderful story that I feel compelled to write, so sit back, relax and enjoy ........
Whenever I think of tandoori my mind conjures up beautiful images of that wonderful tandoori chicken or even the little tandoori popcorn chicken you get at Tandoori Hut in Trincity Mall and Grand Bazaar. Since I've been exposed to this type of flavour I just can't get enough of it, especially the tandoori pop corn chicken.
But, with the recession looming over us, certain luxuries have to be passed up for more economical choices. I already had my appetite whetted with this new flavour or taste so I had to look for an alternative.
At first, I researched how the tandoori chicken was done and after looking at a few videos I was convinced that I could try it sans the traditional tandoor. I would either try it in the oven or fried. But, there was one problem; I would have to make the seasoning from scratch. Not having some of the different ingredients to make the final masala made me shelve the project for some time. Then one day while shopping I saw something that made me smile.
I was doing my normal month end shopping, picking up my usual grocery items at Xtra Foods at Grand Bazaar and pushed my trolley through to the aisle with all the seasonings. I picked up the usual Goat and Duck Curry, Amchar Masala, Roasted Geera Powder, Saffron (Turmeric) and then I saw it....there in a little corner, almost hidden and maybe unknown to most who passed it by.
But, to me, it was like finding some lost treasure left by some spice pirates lol. One of my favourite brands for seasonings "Chief" actually went and made Tandoori Masala. I was skeptical at first, but after looking at the ingredient list I confirmed that it was exactly what I was looking for.
Surprisingly, after doing all the steps for the tandoori and putting it on the grill it tasted exactly how I envisioned it. But I still wanted to work on that so again I put the recipe aside and continued working on other recipes.
Then it happened one day. As if by some mistake my wife was frying fish and decided to do something different. So along with the usual green seasoning she poured some of the tandoori masala on the fish and left it to marinate before frying. At the time we were also making some carrot rice as a recipe post for the site and I just added the tandoori fried fish as part of the dish presentation for the final photos.
Well I didn't think much of it, until one facebook fan noticed the fish in the picture and asked what it was. Then someone else saw it and asked the same question. Soon it was a request I couldn't ignore. I guess it was a recipe that was just begging to be posted lol.
So, long story short, we have an original tandoori fried fish recipe to share with you all that almost didn't get posted. Special thanks to those of you observant STC Crew foodies who helped make this possible. Here's Tandoori Fried Fish trinistyle. Enjoy!
TANDOORI FRIED FISH
2 packs fish fillets (about 4 fillets)
lime juice to wash the fillets
2 tbsp. tandoori massala
1 cup Panko bread crumbs
½ cup cornstarch
2 tablespoon green seasoning
1 tbsp. paprika
1 tbsp. fish seasoning
2 tsp. parsley
1 tsp. black pepper
1 tsp. cayenne pepper
1 dash of white pepper
1 tsp. salt
In a plate, place the Panko bread crumbs with a little parsley and in another plate the cornstarch.

Tandoori Fried Fish
- 2 packs fish fillets about 4 fillets
- lime juice to wash the fillets
- 2 tbsp. tandoori massala
- 1 cup Panko bread crumbs
- ½ cup cornstarch
- 2 tablespoon green seasoning
- 1 tbsp. paprika
- 1 tbsp. fish seasoning
- 2 tsp. parsley
- 1 tsp. black pepper
- 1 tsp. cayenne pepper
- 1 dash of white pepper
- 1 tsp. salt
- Wash the fillet with lime juice and cut in four.

- Season with the fish seasoning, parsley, paprika, pepper, salt, and green seasoning.
- Add the tandoori masala and mix well. Leave to marinate for at least 30 minutes in the refrigerator.
- Prepare the breading and coating for the fish.
- In a plate, place the Panko bread crumbs with a little parsley and in another plate the cornstarch.
- First coat the fish fillet with the cornstarch.
- Then press in the fish fillet onto the Panko bread crumbs.
- Place the coated fish on a tray. Leave to rest for about five minutes.
- Heat the oil. Fry the fish, turning to make sure each side is evenly fried.
- Fry for about 3 minutes.
- Remove and drain on paper towels. Serve hot.
