An Interesting Spicy Egg Salad

This is not an ordinary egg salad; this is a spicy egg salad made with one of my favourite sauces, chadon beni chutney.  It is also one of my mom's favourite ways to prepare boiled eggs.   Not everyone likes plain boiled egg.  This way makes it a lot more tasty and interesting with a little added spice on that slice of bread/ biscuit/cracker. You can also add a little lettuce, tomato or pickles to your sandwich.   A spicy egg salad sandwich can be quite satisfying.

A Spicy Egg Salad Recipe

This is a simple recipe and within a few minutes you can have a delicious meal, especially for breakfast, and one that is a high protein meal  and a great way to begin the day.  Also, you can add other ingredients such as cheese, cucumber and sweet pepper.  However, don't leave out the pepper sauce and chadon beni chutney – it is what makes it especially Trini. These two ingredients are also a great way to mask the fresh scent of boiled egg.  Thus, you will definitely get no complaints about its spiciness.  So, go here is my mom's deliciously spicy egg salad.  Enjoy!

SPICY EGG SALAD

3 hard boiled eggs
1 tsp. mustard
2 tbsp. mayonnaise
1/3 tsp. salt
1 tbsp. chadon beni chutney
1/4 tbsp. pepper sauce
1/4 tsp. black pepper

 

Boil the eggs.

Crush the boiled eggs with a fork.

Add the rest of ingredients.

Mix well.

Note: The eggs can be crushed to a paste consistency and used as a filling for puffs as well.

The spicy egg salad is ready to be served as a filling or as a dip. Refrigerate to keep from spoiling.

Ingredients

  • 3 hard boiled eggs

I’m thinking when I come home to Trinidad and I have the usual gang invading my apartment after they finish work, I shall serve them individual small bowls of Spicy Egg Salad ( a la above recipe), Cheese Paste (as in the recipe on this website) and tuna salad with mounds of Crix on a plate. With slices of homeade cake along with currants roll and pots of English Breakfast Tea that should calm them down before we go out to lime!! Small bowls of Tropical Fusion Salad would also go well with the above, I believe….

  2. Enjoying digging thru the archives. This seems really easy to do and for those time when you just wanna eat something late at night. Will try making the Shadow Benny chutney the next time I visit my Latin American Supermarket here in NC to get some fresh Shadow Benny.
