Have you had a cupcake today? Here is my honey cupcakes recipe; one made with honey and far less sugar. But, mind you, the sweetness is mostly in the glaze or the frosting. Read on….
Cupcakes have become a favourite today, as it is easy to prepare and bakes fast. They are mini cakes in a paper cup and most times come with a generous serving of frosting or layer of icing. Chocolate and vanilla cupcakes are the most popular, and such recipes are abundant online and in many printed cookbooks.
As a matter of fact, cupcakes are so loved that you can find cookbooks devoted specifically to cupcakes. Cupcakes are also a favourite to serve at for children's birthday parties and baby showers.
Now, I am not a fan of frosting or even icing. At my age I don't think I should be indulging too much sugar in such treats. That would explain the obvious absence of a “cupcake” on this website up until now.
Now, I do have a lot of muffins on the site, but they are all plain, except for this one. So, I guess, if this cupcake hadn't icing on it could be called a muffin. This one is much lighter than most of my muffins.
Nevertheless, the glaze for this honey cupcake is also very simple. I purposely avoided the frosting because my family tends to waste the frosting on cakes. It usually goes down the drain. This one was delicious with a wonderful crunch. The instruction for the glaze follows after the recipe instructions.
Here is a delicious honey cupcake recipe.
HONEY CUPCAKES
1 1/2 cups all-purpose flour
3 tbsp cornstarch
3/4 tsp. baking powder
3/4 tsp. salt
5 1/2 tbsp. butter
1/2 cup honey
1/4 cup granulated sugar
1 tsp. vanilla
2 eggs
3 tbsp. apple cider vinegar
Beat well after each addition. Pour into greased muffin pans or paper cups.
Note: Generally, each paper cup can hold about 2 tbsp of mixture.
Bake cupcakes for about 20 minutes in a moderate oven at 375 degrees F.Leave to cool then frost as desired. This recipe will yield 12 cupcakes.
Note: The cupcakes have a somewhat golden look because of the amount of honey used in this recipe.
I found this to have a beautiful effect.
NOW FOR THE TOPPINGS
Cupcake glaze
1 3/4 cups powdered sugar
1 1/2 tbsp. warm water.
Sift the powdered sugar into a bowl and mix it with the warm water. Mix to form a smooth soft paste. Spread the glaze onto each cooled cupcake with a blunt knife. You may add your favourite sprinklers, chopped nuts, or candy decorations.

- 1 1/2 tbsp. warm water.

Butter frosting
2 tbsp butter, softened
1 1/4 cup powdered sugar
2 tbsp. milk
1/2 tsp . vanilla
Beat the butter, sugar, milk and vanilla together in a bowl until smooth. Spread over cooled cupcakes. Again, you may add your favourite sprinkler, nuts, or candy decorations.
Honey Cupcakes
Ingredients
- 1 1/2 cups all-purpose flour
- 3 tbsp cornstarch
- 3/4 tsp. baking powder
- 3/4 tsp. salt
- 5 1/2 tbsp. butter
- 1/2 cup honey
- 1/4 cup granulated sugar
- 1 tsp. vanilla
- 2 eggs
- 3 tbsp. apple cider vinegar
Instructions
- In a deep bowl sift flour, soda and salt together twice. Set aside.
- In a separate bowl, cream together the butter, honey, sugar and vanilla. Add eggs and beat until fluffy.
- Add dry ingredients and vinegar, alternately beginning and ending with dry ingredients.
- Beat well after each addition.
- Pour into greased muffin pans or paper cups.
- Note: Generally, each paper cup can hold about 2 tbsp of mixture.
- Bake cupcakes for about 20 minutes in a moderate oven at 375 degrees F.
- Leave to cool then frost as desired.
