Does my posts reflect my life? Of course it does. I always try to reflect what is going on in my life, and lately I've been on a health drive (A big thanks to all my readers who ask questions on living a healthy lifestyle).  Now, hosting a website that shows many how to cook a wide variety of meals has it advantages and disadvantages.  For one, I too have to watch what I eat, and make sure I do not overeat.  It can be quite a challenge, for as you all know I love to cook And eat.  Plus, my liberal eating ways are now showing.

Chicken and Vegetable Soup and A Detox

That is why I have decided to take my own advice and follow an inspiring weight loss book called “Dare to Lose: 4 Simple Steps to a Better Body“. I am going through the steps and will definitely keep you abreast to how I am coping.  Now many of things in the book I had already adopted in my life so I believe this should not be difficult. Right?

The first thing I did was to take the survey mentioned in the book, and true to it all, I am bit overweight and you know that could lead to other problems. So in true Trini style I am “taking in front, before in front take me” and make a few changes ( I assure you it will not affect the quality of the recipes, as a matter of fact, it might just make them better).

The next thing I am doing is the first step in the program.  I'm on a detox, a  very simple one at that. I'm only having vegetables and a small amount of fruit each day. My vegetarian readers will surely be happy to hear about how I'm eating, considering how I have said in the past how much I love meat, cheese, and pasta.  So far the experience is actually enjoyable.

The salads are tasty and the vegetable soups delicious (sometimes I add a little chicken, not much, for a little taste). And the fruits? Don't even start me. They seem more alive and refreshing, so much so that anything made with real sugar seems a little too sweet.

Chicken and Vegetable Soup Recipe

Anyhow, back to the recipe.  As part of the daily meals during my detox week this soup was one of the many meals prepared by my wife. It's simple (can be entirely prepared in less than 30 minutes); it's delicious and light, but remarkably satisfying as well.  The detox week is almost done, and I am feeling remarkably more energetic than ever. For now, here is the recipe for this tasty, yet simple chicken and vegetable soup. I'll keep you updated as the time passes.

CHICKEN AND VEGETABLE SOUP

Ingredients:

1 sweet pepper, chopped
2 cups broccoli, chopped
1 tin baby corn, drained
2 cups pumpkin, diced
1 cup carrots, diced
1 pimento pepper, chopped
1 lb chicken, seasoned and diced
4 cups water
salt to taste

Direction:

Season and put the chicken to boil .

Cut up the vegetables and set aside.

Add the carrots…

pumpkin…

and stalk from the broccoli. Let simmer for about 5 minutes.

Then add the pimento ….

…baby corn, sweet pepper and broccoli.

Let simmer until vegetables are tender and the chicken cooked through.

Adjust salt to taste. Serve warm.

  • Adjust salt to taste. Serve warm.

See how simple this recipe is? You could add any vegetables you like to this recipe just don't add starchy carbs like potato and cassava.

I make my soup similar to this, the only difference is that I would brown my chicken first, then add in the veggies and let them soften a little, add some home made chicken stock and water and add the chicken. Some parsley or thyme and a little bit of salt and pepper and it taste delicious….simple and it takes about the same time as this recipe.
    this looks great though
