Skin from 1 pineapple
Sugar to taste
enough to cover the skin
Bitters for taste
Put the skin in a pot, cover with water and bring to a boil. Strain the water and set aside to cool.
When cooled, sweeten to taste and strain again before bottling the juice and refrigerating it.
You can add pieces of pineapple to push the taste a bit.
