Mango Cake

Ingredients

  • 1 cup sugar
  • 1 tsp. cinnamon
  • 2 tsp. baking soda
  • ½ tsp. salt
  • 2 eggs well beaten
  • 1 tsp. vanilla
  • 1 – 1 ¼ cups mango puree
  • ½ cup chopped walnuts
  • ½ cup raisins Optional
  • ¼ cup butter
  • 2 cups flour
  • ½ tsp. lime rind
  • Cream Cheese frosting
  • ¼ cup of butter
  • 1 cup cream cheese
  • 2 cups icing sugar

Instructions

  • Sift the flour. Mix flour, cinnamon, baking soda and salt. Set aside.
  • Mix the mango puree, sugar and butter.
  • Beat the egg.
  • Add lime rind and vanilla.
  • Mix the beaten eggs and mango mixture.
  • Then combine all ingredients together.
  • Mix well and pour into prepared 9″x11″ pan and let sit for 10 minutes. Bake at 350 degrees F for 40-45 minutes.
  • Frost with a cream cheese frosting.
  • To make the cream cheese frosting blend together ¼ cup of butter, 1 cup cream cheese and about 2 cups icing sugar.
