The first time I ate saltfish accra I thought that it was a brilliant method to cook saltfish. I was, and still am, amazed with the combination and its unique taste. I still think it should not be classified as an appetizer though after all, I have willfully eaten about five of those little gems on one occasion and felt satisfied. If you feel you're up to it to beat my five, go right ahead! =^)
Saltfish Accra: A Simple Dish To Make
This simple dish can be prepared and done within half an hour. It is a great dish to serve at picnics, limes, parties and family gatherings. I have heard that some people eat it with a float (although in my opinion a float and a fry bake looks the same). Personally, I think accra is a great substitute for potato chips. It is a more nutritious appetizer. Better yet, try frying it in coconut oil. It goes great with dips such as mango chutney (look out for this recipe soon) or any other dip of your choice (it is not a hard and fast rule). I like to eat it with a dip made of ketchup, mustard, and pepper.
Saltfish Accra Recipe
Anyway, here is the recipe. I hope you try it and enjoy it!
2 cups flour, sifted
2 tsp. Baking powder
1 tsp. Sugar
½ lb. Salt fish, boiled and flaked
1 tsp. parsley
1 tsp. Celery, finely chopped
1 bundle chive, finely chopped
1 small onion, grated
2 cloves garlic, grated
2 sprigs thyme, finely chopped
Oil for frying
The chopped ingredients for the menu.
Pour some water at a time and mix the ingredients until a soft batter is made.
Dip a tablespoon in a bowl of water before dipping it in the batter.
Scoop up a tablespoon full of batter and drop into hot oil.
The batter slips very easily from the spoon when you dip it in the water first.
Repeat the previous steps.
Allow the batter to fry until slightly golden on one side and turn over until the other side is also slightly golden. Remove and drain on a paper towel.
This recipe will make about 13-18 accras.

- Hot pepper and salt to taste optional
- Combine the flour, baking powder, onion, garlic, the rest of the seasonings, and the saltfish.
- Pour some water at a time and mix the ingredients until a soft batter is made.
- Dip a tablespoon in a bowl of water before dipping it in the batter. Drop tablespoons of the batter into hot oil.
- Fry until slightly golden. Remove and drain on a paper towel.
