I find it strange that I'm posting yet another salad; this time a bean salad. It has to be a reflection of what's going on at home. And, quite possibly it is. My wife is laughing at me these days...Oh, I'm eating like a goat, eating all these greens and vegetables lol!! But, its just her way of poking fun at me.
Seriously, after reading about Trinidad and Tobago being the third fattest country in the world, I guess I became a bit concerned about my cooking and how it impacted on people who visited the blog from time to time. I care about my readers and would like to do my part to help this predicament our country is facing. With this in mind, I decided that we'll do our best to provide healthy recipes for our fellow Trinis, home and abroad, while still having the same fun I'm used to in the kitchen.
Some people still think the report was fabricated or even fake, but even if it's not, we as Trinbagonians have to be responsible for our own health and well being. It's time we take a "social pulse" on what is going on in our society. Frankly, over the past few years I have observed an increase in fast food outlets and also their growing popularity amongst all ages, especially the younger generations. People don't seem to cook much any more and prefer to stand in line at their favourite fast food restaurant, eating place, grill house, burger joint etc. to buy food.
Something needs to be done and, to me, it starts with nutrition. "You are what you eat." is really a true statement. We are the sum total of all our experiences and with that experience comes also, our eating choices over time. It really adds up after a while and before long you're a few pounds overweight to being obese and living on a cocktail of medication to get you through the day.
Honestly, I don't want this for myself or my fellow Trinis. Life is too short to try and remember what pills to take on a Wednesday before and after lunch. Or, how many units of insulin to take on evenings. So, It's time for us to wake up as a nation and be aware of what we put into our mouth; how we feed our young ones and the type of establishments we support blindly.

Err! Where was I again?....Oh Bean Salad...Got carried away there for a moment lol!!...Ummm..... here's Bean Salad. Enjoy!
Bean Salad Recipe
1 /2 cup Lima beans
¼ lb bacon ( about 4 - 5 strips)
1 /2 cup red onion, sliced
1 med sweet pepper, sliced
3 tomatoes, chopped lengthways
¼ cup olive oil
1 tablespoon vinegar
2 tablespoon lemon juice
½ teaspoon salt
¼ teaspoon black pepper
½ cup Parmesan Cheese or Cheddar Cheese, grated
2 eggs, hard boiled and sliced
Pressure cook the Lima beans for 20 minutes. Rinse under cold water.
Drain and place in a large mixing bowl.
Saute the bacon until crisp then drain on paper towels. Dice.
Note: Turkey bacon was used.
Slice the red onion, tomato and the sweet pepper. Toss with the beans.
Blend the oil, vinegar, lemon juice, salt and pepper. Pour over the salad, toss and marinate 1 hour.
Sprinkle with cheese, egg and bacon and serve.
