Chadon Beni Parmesan Muffins

Parmesan muffins are already a hit in every which way, ( it’s the cheese man! it’s the cheese) but, add our favourite trini herb Chadon Beni and you have a muffin superstar. Muffins are quick breads that you can make in 30 minutes or less and thus is enjoyable to make for the whole family or friends in a jiffy. Man, you can even make it into a lime. Just invite some friends over and bake these parmesan muffins while everyone are busy ole talkin’…….Then, open your kitchen door and let the aroma just waft through the living room…..utterly enticing!

These bad boys will surely liven any party or social event and I’m sure many will ask you for the recipe or what’s the secret ingredient you’ve added to the parmesan muffins that makes it so exotic. Well, as for the secret you could tell them it’s a family secret passed down for generations…

That’ll throw them off for a while hahaha !!! *stop giggling* :)

Whether you are making these for the family or for a special event, the added twist of the herb chadon beni will certainly lift a few eyebrows because of the creative mix of sweet, cheesy and pungent. But it’s all about control. Since these parmesan muffins already has a distinct taste or taste memory in people’s minds we don’t really want to “rock the boat” with mr chadon beni’s pungent flavour. So great care has to be taken when mixing these flavours, together.

This is where the taste buds came in to play, while making these parmesan muffins. But, don’t worry all the experimentation has  already been done so no worries again. My taste buds eventually, after much tasting, decided upon 1 tsp of finely chopped chadon beni to be added…just enough to know he is there but not too much to interfere with parmesan’s slightly tart but milky flavour.

 

And so another simply trini cooking original recipe was born. Chadon beni parmesan muffins has definitely gotten my trini tongue’s stamp of approval and now everyone can try it. Hmmm! Felt like the mouse in Ratatouille for a while there being the head taster lol!!

So put on your aprons and hats and let’s bake some parmesan muffins with a trini twist.

My parmesan muffins recipe

Parmesan Muffins, Chadon beni parmesan muffins


CHADON BENI PARMESAN MUFFINS

1 egg
1 cup milk
1/2 cup plain yogurt
1/2 cup butter, melted
1 tbsp baking powder
2 1/2 cups flour
1 tsp salt
1/4 cup sugar
1/2 cup parmesan cheese, grated
1 tsp chadon beni, chopped finely

 

Preheat oven to 400 degrees F

 

In a bowl, add the melted butter…

… beaten egg….

 , milk and yogurt.

Whisk and set aside.

 

 In another bowl mix the flour, baking powder, salt, parmesan cheese, sugar and chadon beni.

 

 Add the liquid and stir until moist.

 

 

 Grease the muffin tins and fill with the muffin mixture. Bake at 350 degrees F for 20 -25 minutes

 And here we have the finished product Chadon beni parmesan muffins neatly stacked waiting for de lime to start :)

    Question…at the beginning it says preheat oven to 400 degrees but then later on it says bake at 350. Am I preheating it then turning down the temperature when I put the muffins in?
