Fish and Chips? Who would have thought that this English staple “fast food ” would catch on here in Trinidad and Tobago? Of course, there is always that Trini twist that we are famous for in our cooking which could account for its popularity. Want to know how popular this fish and chips combo is? Just go by Sam’s at Maracas Bay and ask for a shark and chips … an alternative to our bake and shark. It is just as delicious with all the Trini condiments you could think of.
For this recipe I decided to forego the shark and use the more common “white fish” which is more commonly available at the supermarket. Plus, I know there are some people who don’t eat fish without scales….Anyhow, let’s leave that scales or no scales debate for another post lol haha. On with the recipe.
Fish and chips with a trini twist
OK for this recipe I used our Simply Trini CookingÂ simple dredging that makes the fish really crispy outside but soft and juicy on the inside. You all may remember it from the fried fish post but I’ll still include it in this post as well.
There is something about the cornstarch and cassava flour mixture that really brings out that crunchy, melt in your mouth texture …salivating here lol!!…. of the fish as you take that first bite. After the initial crunch, your taste buds get aroused by Uncle Chadon Beni and he five piece Parang band……..;Â Chive on de box bass, Celery on de mandolin; Pimento pepper on shac shac; Fine leaf thyme on guitar and Garlic on de toc toc,…… called “ De Green Seasoning Serenaders” hahaha!! lol!!
Anyhow, this fish and chips recipe surely screams Trinidad and Tobago all over …. especially whenÂ you add some Mango Kuchela, tambran sauce, mother in law, mango chutney, garlic sauce ……you name it. And, doh even think of putting strawberries or apricots in there!Â This is as trini as you could get. Wha yuh say?Â Here’s Fish and Chips Trinistyle.
My fish and chips recipe
3 medium sized potatoes
2 fish fillets,Â (white fish)
oil for frying
2 tsp. parsley
2 tsp. paprika
2 tsp. green seasoning
2 sprigs fine leaf thyme
1/2 tsp. black pepper
1/2 tsp. onion powder (optional)
1/2 tsp. garlic powder (optional)
1/2 tspÂ salt
1/2 cup cornstarch
1/2 cup cassava flour
seasonings to taste
Note: The baking makes the outer coating crispier and the fish more tender inside. Try it, yuh go see what ah talkin about.
