This recipe is one of my favorite gluten free recipes, GFCF Banana Nut Loaf. I am always reminded that one of the best fruits to eat is a banana. It is filled with so much nutritional goodness that I know of people who would eat a banana or two before they do any physical exercise such as a workout in a gym.
Bananas Make This GFCF Banana Nut Loaf Special
The energy from one banana is a remarkable 89Kcal 100 grams. So the gym fanatic who loves bananas cannot go wrong especially, when bananas have other valuable nutritional benefits such as fiber, magnesium, potassium, vitamin A, folate, beta carotene, alpha carotene, choline, vitamin C, and a number of amino acids (to name a few).
All these nutritional benefits aside, bananas are a staple fruit for us here in Trinidad and Tobago and more so the Caribbean. As you would have known, I have done a lot of recipes with bananas in either its green form or its ripe form: some of them surprising in their taste. But, the versatility of this fruit does not stop at those previous recipes.
An Original Gluten Free Recipe
Today, I have for you yet another Simply Trini Cooking original bread recipe made for the health conscious and those with gluten allergies in mind. One taste of this bread and you would never know the loaf doesn’t contain all-purpose flour. It is moist and has a wonderful nutty taste because of the chopped almonds and coconut in it.
With that said, I have a warning lol!!……When you’re eating your banana nut bread, find a place to hide so no one will beg you for piece…hahahaha!! Yes it’s that good
Anyhow, this will certainly be a hit in any household. Plans are on the way to make one or two for Christmas here at home. Enjoy GF Banana Nut Loaf.
Â GFCF Banana Nut Loaf Recipe
1 1/2 cups granulated sugar
1 cup melted butter
4 ripe medium-sized bananas, mashed
2 1/2 cups gluten-free flour (I combined 1 cup cassava flour and 1 1/2 cups brown rice flour)
1 tsp. baking soda
2 1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon, optional
1 cup shredded coconut
1 cup coarsely chopped almond nuts
1/2-1 cup maraschino cherries, halved
1 tsp. vanilla essence
Bake for about 1 hour at 220 degrees F
or until a toothpick inserted in the center comes out clean.
