A good bread recipe has been overlooked for some time I must confess, but for this festive Christmas season I have to say, "No more!". Finally, a homemade bread recipe post just in time for the season! 'Til this day I don't know how I forgot to post one. Also, what good is ham on a Trini Christmas morning without freshly made homemade bread.
Most times the bread we bake is plain and without any real character. This time I thought the bread should be special, considering the season is a special one. That is why I am eager to share with you this special bread recipe, one of my favorites, orange bread.
This bread is quite easy to make, and it has a distinctive lemony, orange taste that you can't ignore... well, at least you could try to ignore it lol! I like it because it uplifts the various delicacies added when you make a sandwich with it - be it ham, cheese, sausage, black pudding, jam... pig foot souse... got ya there hahaha :-) . I tried the orange bread with some ham and chow chow and Boy! Did it taste delicious!
It is especially wonderful with butter while still hot. Just think about it for a while... you have a half melted, salted butter in between two "cushiony" layers of orange bread slices; the aroma tickles your olfactory nerves preparing you for a wonderful and satisfying "citrusy" experience. Your brain registers a citrus salted butter flavour.... Oh, I could taste it right now as I write.
This bread is what I am making sure to have on the table for breakfast on Christmas day. What bread would you have on your table come Christmas day? A plain run off-the-mill bread or Orange bread? 5 cups all purpose flour, divided
1 1/2 tbsp. yeast
3 tbsp. white sugar
1 cup orange juice (from concentrate)
1 cup warm water
1 egg yolk, beaten
2 tbsp. melted butter
1 tsp. grated orange rind
1 tsp salt

Brush with melted butter. Bake for about 40 minutes at 350 degrees F or until golden and firm. Then remove from oven and cool before serving.
