Bread Pudding

Do you have any left-over slices of bread and you're tired of eating them in the normal way? If you are like me, I always find it a good change when these simple slices of bread are converted into a delicious Bread Pudding.

Bread pudding is another popular dessert in Trinidad and Tobago. In Trinidad and Tobago, the Bread Pudding is sometimes served with ice-cream, I love it with coconut ice-cream. But some people would eat it as it is. This dessert recipe hardly needs any help to ensure it tastes great.

This Bread Pudding recipe is easy. The bread used was a tasty whole grain bread. For this reason, the Bread Pudding came out tasting extra delicious and very much filling. It is always a welcome to enjoy a little old-fashioned bread pudding once in a while. So here is your free bread pudding recipe. I encourage you to try it. You will not be disappointed.

Here is Bread Pudding....



Bread Pudding



BREAD PUDDING

4 cups whole grain bread (cut small)
4 eggs
2 cups evaporated milk
3 tbsp. coconut oil
1 cup honey or brown sugar
2 tsp. vanilla essence
1 cup raisins
2 tsp. nutmeg
1/2 tsp. grated lime or lemon rind
1 pinch salt




Dice the whole grain bread slices.



Add the milk and vanilla essence to the bread and leave to soak for about 10 to 15 minutes.



Add the oil to the soaked bread.



Mix again.



In a separate bowl, mix together the sugar, cinnamon and salt.



Add the sugar (or honey if you choose).



Mix well.



Add the raisins.



Beat the eggs. I used a hand blender to get the job done quickly.



Add the grated lime or lemon rind. Mix thoroughly.



Bake in a greased dish in a moderate oven for about 45 minutes until done.

Made this last night for my mum's church using this recipe and it came out PERFECT! I didn't have coconut oil so I just substituted some carnation milk for coconut milk. Thank you so much for all your recipes.
