I know this is not my regular recipe post but I just have to pause to wish everyone a Happy Independence Day here in Trinidad and Tobago. Forty seven years and still going strong; we’ve come a long way. I feel there is so much we have to learn as a nation and as a people still, but in time I know we’ll get there.
So what am I up to today? Well, I’m just relaxing at home with my family and of course cooking. We decided to make some fish broth; I can’t wait for it to finish. Later I’m going to a little All Fours lime, not playing though, but I hear they’re making Pelau so I’m there already
Anyhow I will be short today; I think the fish broth is ready. Happy Independence Day again. Ah gone!
