Look at that! You could almost eat the picture! :-) This weekend I decided to fulfill a request actually its more like two. First Keisa from the group asked me to do it since Mother's Day and then a few days ago Trevor was wondering if I wasn't doing any grilling. So in answer to these two members from my facebook group I decided to post a barbecue recipe.
This barbecue chicken is my moms recipe done in an oven grill. I absolutely like how the barbecue chicken comes out when done in the oven. The chicken is juicy and bursting with trini flavour. Every taste is working in harmony; none overpowering the other. First you get a little of the the barbecue sauce with the bay leaf and garlic, then quietly the burnt, semi charred flavour delicately envelops your tongue and as you chew... Oh ! the green seasoning gently plays with your taste buds sending an auto muscular reaction to chew more while your eyes and hand coordinate the next wave of ecstasy to your mouth.....Now that is flavour!
But still, as if by primitive instinct you just can't stay away from the smokey, semi burnt flavour of a good outdoor charcoal barbecue. You know what I mean? It's just you and the raw flame; no fancy equipment or utensils. You have to be the master of the flame. Skill and total control is needed. Give over to the flame and you'll have carbon instead to eat. LOL!!
Anyhow, it's been a pleasure fulfilling this request so keep them coming. Maybe just maybe, I may do one in place of my scheduled posts. Have a great day everyone. Here's barbecue chicken; trinistyle.

2 1/2 cups barbecue sauce, divided
Mix 1/2 cup of chicken stock and 1/2 cup of barbecue sauce and reduce for 1 1/2 minutes. This is for preliminary basting.

Periodically turn and baste the chicken with the remaining cupof barbecue sauce until it is well done.
It took us about 1 1/2 hours.
