Trinistyle Scrambled Eggs

How do you like your eggs? sunny side up? omelet? scrambled? I like my eggs scrambled but not just scrambled, I like my eggs scrambled Trini style. Similar to seasoning meat, I like to add fresh herbs and cheese all mixed up into one mishmash of exotic flavour.
Now I have been frying eggs for a while and have learnt a few things along the way. One of which is frying eggs over a low flame. Other than not burning your eggs, somehow, especially with this recipe, the ingredients get time to permeate through the eggs. Actually, I discovered this by accident one time and ever since I have been using this method, unless I'm in a hurry!
Adding the cheese came a little later which I learnt from my wife but the way she did it gave the cheese more of a grilled taste and appearance( which tastes great also). The slow cooking method I use works great for the cheese, giving it time to melt.
To me this is a complete meal and if you're on a low carb, high protein diet ( like I'm on these days) this recipe makes a great breakfast or dinner meal by itself. In fact I read in a book that we're supposed to eat most of our proteins in the evening time but that's another story if you're interested. Are you?

TRINISTYLE SCRAMBLED EGGS
4 leaves Chadon Beni, chopped finely
3 leaves big leaf thyme, chopped finely
1 sprig chive, chopped
1/2 onion
1 clove garlic, chopped finely
3 eggs
1/2 cup grated cheese
salt to taste
butter

You know the first time I had eggs like this was while I was visiting friends in Canada, and they called them Guyanese-style eggs :-) since she (a Trini) learned it from the Guyanese up there.
But it's completely in keeping with the Trini style of cooking, I just always had plain scrambled eggs before.
I like to cook the veggies a little before adding the eggs,and then add the cheese at the end so it just melts and remains gooey.

Chennette how yuh goin :-) All I can say is that no matter how this recipe is done or what it is called it tastes great, especially with all the extra cheese LOL!

it's awesome to see how similar it is to our North Indian egg bhurji.......my husband's fave breakfast.....i use very little cheese n sometimes even skip it too...n lots of crushed black pepper is my addition to it.

hi Felix, your eggs brought back memories in Trinidad...my brothers were and still are great cooks, this is how they made it...this delightful recipe and not to mention the picture got my tummy rumbling again, and i just eat yuh know!
