Time and time again, I just marvel at the simplicity of our cooking here in Trinidad and Tobago. With just a few ingredients we could whip up a tasty meal very quickly. To me, it seems like a common thread amongst all the cultures that inhabit the island.
Naming Our Trini Dishes
Most of the time the meals basically consist of two parts: legumes, vegetables and or meat either stewed or curried etc. and a carbohydrate be it provision, rice or flour. But what intrigues me is the amount of variations we get from just these “parts”. So we could have sada roti and baigan choka, fry bake and saltfish, rice and dasheen bush bhaji or even stew pigeon peas and rice. See what I mean! It’s always a carb with everything else, which in fact gives the dishes their names as well.
Bake and Fry Cabbage: A Two Part Meal
With this in mind I have for you all today bake and fry cabbage; another “two part” meal that’s simple to make. This cabbage recipe is so easy I feel that anyone could try it and succeed the first time around. Well that’s provided you follow the instructions. What’s great about this recipe is that you could make it for breakfast or dinner along with your favourite beverage, like a nice glass of grapefruit juice or mauby.
Cabbage in other Dishes
Traditionally we (Trinidadians) use cabbage in a few recipes like soups, stews, curries and of course how I’m showing you all today fried but not fried in the strictest sense. In a few posts to come I feel I will have to show some more ways of cooking cabbage; what do you think? I think it’s a great idea….(Thinking to my self: corned beef and cabbage with rice really does hit the spot!)

Bake and Fry Cabbage Recipe
BAKE AND FRY CABBAGE
1/2 medium cabbage, chopped
3 cloves garlic, chopped
1 small onion, chopped
2 tbsp. oil
salt to taste
pepper to taste

Adjust salt and pepper and serve hot with bake.
