Yes, I am back in full swing. I really missed posting. Did you all miss me? Well I missed you all. Now that the dust has settled, I have a backlog of posts and pictures of Trini dishes I did over the past few weeks. So, the time has come to resume my labour of love and get these recipes posted. It has been a long time ( at least for me it felt like a long time) so look out for the many posts to come in the following weeks.
Today, I have for you veggie wraps. I love veggie wraps, because it encourages healthful eating and yet it adds variety to the daily meals. The wraps we used were tortilla wraps we bought at the supermarket. I will encourage you to buy wholewheat tortilla wraps; even though I could not get it this time at the grocery I opted instead for the plain wraps. I filled them with the cooked vegetables, cheese, and my favorite sauce (Chadon Beni Chutney). Everyone enjoyed them; they were a hit!
However, you don't have to stick to vegetables alone for your wraps. You can add pieces of baked chicken or fish and in keeping with my style, why not experiment with a few combinations... I can already imagine it ...Curry chicken strips, shredded lettuce and a bit of grated, cheddar cheese and of course you can't forget the Chadon Beni chutney or homemade pepper sauce to "spicy-fy" the whole mix. Mm mm! I can taste it now.
What a fusion that is, don't you think? Only in Trinidad you could get Spanish and East Indian cooking influences coming together like that! Anyhow, I'll keep it short and leave you with our veggie wraps to savour... and make you hungry enough to make some for yourself and the family. Ha Ha! Enjoy!

1 carrot
1 small onion
1/2 small cabbage
1 sweet pepper
1 pimento pepper
1 leaf chadon beni
1 sprig parsley
1 sprig chive
1 cup grated cheddar cheese
2 cloves garlic
2 tbsp. olive oil
water
salt to taste
Cut the vegetables length-wise. Chop the chive, chadon beni, celery, and parsley.
Boil some water in a deep pot to steam the vegetables.The amount of water used should just about cover the vegetables.
Add the vegetables to the boiling water, coverand allow to cook for about 5 minutes.
Do not overcook the vegetables.
Strain the vegetables and set aside.
In a frying pan, add the oil.
Add the onion, garlic, chadon beni, and chive. Cook for one minute.
Add the vegetables and saute.
Add salt to taste....
And the rest of the seasonings. (If you like olives you may also add it now).
Toss again and remove from heat immediately.(The vegetables is sauteed for about 2 minutes before removing from the heat).
Spread a tortilla wrap on a plate and put some cheese on it.If you like cheese like me, you can spread to you heart's content! :)
Top with the vegetables.
Finally top with your favorite sauce, such as garlic sauce.Mine of course is chadon beni chutney.
My chadon beni chutney also has a lot of pepper so I didn't need pepper sauce.
Roll, fold, [ behold! :-)] and enjoy. You can also heat them in the oven or microwave to melt the cheese. Delicious!.
