Trini Ox Tail Soup

Since I posted the stew ox tail I felt that I had to post another of our favourite dishes made with ox tail. Ox tail soup is not as popular as cow heel soup or corn soup in Trinidad and Tobago but, of course, it has our signature herbs and seasonings and thickness that all Trinidadians have come to love. Although this dish is common, I have to say that it may be a little expensive if you ordered it in a restaurant, because oxtail is a bit pricey at the supermarket. This is not a meat I would buy all the time, especially when I could get a better bargain buying more cow heel for the same price. And these days I'm always on the lookout for a bargain or a deal.

Lately, prices of "goods" have skyrocketed in T & T so shopping is getting to be a bit tricky. Tomatoes these days range from TT $12.00 to about TT $14.00 a pound. And now a bundle of chive is about TT $4.00 and it's not Christmas season as yet. Anyhow, we all have to live and survive, so I have started to watch what I buy and where I buy it. My wife commented that it doesn't matter where you buy; the prices are expensive.....How did I get here ...me and my wandering mind again...We were talking about ox tail soup. As I were saying, ox tail ,although a bit expensive tastes really delicious in soup. What else can I say, try it out and tell me if you agree. Here's Ox tail soup, trinistyle.




OXTAIL SOUP

1 lb ox tail
1 sprig fine leaf thyme
1 chive
1 sprig parsley
1 carrot
1 bouillon cube (optional)
1/2 lb pumpkin
1/2cup split peas
1 small onion
2 pimento peppers
3 cloves garlic
salt to taste
water










Wash the ox tail and pressure cook for 15 minutes











In the mean time chop the herbs and set aside.


Add the split peas to the ox tail and add a little water if necessary.
Pressure cook for about 10 mins.






Chop the carrot and pumpkin












Add the carrot, pumpkin and chopped herbs to the split peas
and oxtail and pressure cook for about 5 to 7 mins.
Add bouillon cube and salt to taste.



The ox tail soup ready to be served.



I'm pleased to say that this dish didn't last long as well when I was finished. By evening I had to make something else for dinner. As you see this is a simple one pot/ pressure cooker dish so there is less clean up afterward. I know some of you would like this very much. So enjoy your ox tail soup and I'll see you tomorrow.
