A Handy List of Equivalents and Substitutions



Baking Powder:
1 teaspoon baking powder + ¼ teaspoon baking soda = ½ teaspoon cream of tartar


Butter:
1 pound butter or margarine = 2 cups butter or margarine

1 stick butter or margarine = ½ cup butter or margarine

½ cup (1 stick) butter or margarine = 7 tablespoons vegetable shortening


Coconut:

1 cup grated coconut = 1 1/3 cup flaked coconut


Corn:
2 to 3 medium ears of corn = 1 pound of corn kernels

1 medium ear of corn = ¾ cup of corn kernels

2 medium ears of corn = 1 cup corn kernels

1 (10-oz.) package frozen corn kernels = 1 ¾ cups corn kernels.


Eggs:

2 large eggs = 3 small eggs

1 egg = 2 egg yolks (for custard)

1 egg = 2 egg yolks plus 1 tablespoon water (for cookies)

8 or 10 eggs (in shells) = 1 pound


Flour:

1 cup self-rising flour = 1 cup all-purpose flour + 1 teaspoon baking powder + ½ teaspoon salt

1 cup cake flour = 1 cup sifted all-purpose flour minus 2 tablespoons

1 cup all-purpose flour = 1 cup cake flour + 2 tablespoons

1 teaspoon baking powder = ½ teaspoon cream of tartar + ¼ teaspoon baking soda

1 teaspoon cornstarch or arrowroot = 2 tablespoons all-purpose flour

1 tablespoon tapioca = 1½ tablespoons all-purpose flour

2 tablespoons flour = 1 tablespoon cornstarch, arrowroot, potato starch or quick-cooking tapioca


Herbs, Spices, etc:
1 teaspoon allspice = ½ teaspoon cinnamon, ½ teaspoon ground cloves

1 small clove of garlic = 1/8 teaspoon garlic powder

1 tablespoon chopped fresh herbs = 1 teaspoon dried herbs or ¼ teaspoon powdered herbs

1 teaspoon apple pie spice = ½ tsp. cinnamon, ¼ tsp. nutmeg, 1/8 tsp. cardamom

1 tsp pumpkin pie spice = ½ tsp. cinnamon, ¼ tsp. ginger, 1/8 tsp. allspice, 1/8 tsp nutmeg

Fruits:
Apples, 1 pound = 3 cups peeled and sliced

Apricots, dried, 1 pound = 3 cups

Bananas, 3 to 4 medium = 1 ¾ cups, mashed

Oranges, 3 medium = 1 cup juice


Honey:

1 cup honey = 1¼ cups sugar + ¼ cup water

1 cup honey or corn syrup = 1 ¼ cups C&H Granulated Sugar + ¼ cup water

1 cup honey = 1 cup molasses


Lemon:

1 teaspoon lemon juice = ½ teaspoon white vinegar

1 teaspoon grated lemon rind = ½ teaspoon lemon extract



Milk:

1 cup buttermilk or sour milk = 1 tablespoon vinegar or lemon juice plus sweet milk to equal 1 cup

1 cup fresh milk = ½ cup evaporated milk + ½ cup water

-or- 1 cup skim milk + 2 tablespoons butter

-or- margarine or 1/4 cup powdered whole milk + 1 cup water

1 cup fresh milk = 3 to 5 tablespoons nonfat dry milk powder in 1 cup water

1 cup sour cream 1 tablespoon lemon juice + evaporated milk to equal 1 cup

1 cup light cream = 7/8 cup whole milk + 3 tablespoons butter

1 cup yogurt = 1 cup buttermilk or sour milk

1 cup sour cream = 1 tablespoon lemon juice + evaporated milk to make 1 cup(let stand 5 mins)

-or- 1 cup evaporated milk + 1 tablespoon vinegar,

-or- 1 cup plain yogurt

1 cup whipping cream (for cooking) = 3/4 cup whole milk + 1/3 cup butter

1 cup buttermilk or sour milk = 1 tablespoon lemon juice or white vinegar + whole milk to make 1 cup (let stand 5 minutes)



Other:

1 (1-ounce) square unsweetened chocolate= 3 tablespoons cocoa + 1 tablespoon butter or margarine

1 ounce unsweetened chocolate = 3 tablespoons cocoa + 1 tablespoon butter or margarine

2 cups cooked macaroni = 1 cup uncooked macaroni

1 teaspoon dry mustard = 1 tablespoon prepared mustard 2

¾ cups oatmeal = 1 pound oatmeal

3 cups cooked rice = 1 cup uncooked rice

1-pound box confectioners’ sugar = 3 ¾ cups confectioners’ sugar

1 cup dark corn syrup = 1 cup dark brown sugar + 3 or 4 tablespoons water

1 lb. Sugar = 2 ¼ cups sugar
